紫甘蓝色素提取及其稳定性研究
摘 要:随着人类生活水平的提高,人们对色素的要求已经不仅仅是鲜艳,靓丽了,对它们的质量、安全性的要求也越来越高.因而从天然植物中寻找色素应用于医药、化妆品、食品、化学领域成为了当前研究的热点之一.研究表明天然植物紫甘蓝中所含紫甘蓝色素中含有大量的抗氧化物质,能够有效清除自由基,具有一定的药理和保健功能.紫甘蓝色素作为天然食用色素,安全性高、色泽自然鲜艳,耐热、耐光,并且紫甘蓝色素廉价易得,在酸碱滴定的突跃部分有明显的颜色变化.经试验证明在不同PH值溶液中紫甘蓝色素比紫色石蕊试液、酚酞指试剂显色明显、准确并且灵敏度高,因而可以作为一种新型的绿色环保酸碱指示剂.本实验主要对紫甘蓝的稳定性和酸碱指示颜色变化方面做了初步研究.

Red Cabbage Pigment Extraction and Stability
Abstract: With the improvement of standards of living, the pigment is not just bright, beautiful, and security requirements are also increasing their quality. Thus, looking from the natural plant pigment used in medicine, cosmetics, food, chemical field to become one of the hotspots of the current study. Studies have shown that natural plant purple cabbage, purple cabbage pigment contains large amounts of antioxidants, which can effectively eliminate free radicals, has a certain pharmacological and health care functions contained. Purple cabbage pigment as a natural food coloring, safe, natural bright color, heat, light, and purple cabbage pigment cheaper, and the obvious color change in the jump portion of the acid-base titration. The test proved that in different pH solution purple cabbage pigment purple litmus test solution, phenolphthalein, refers to the reagent color accuracy and high sensitivity, which can be used as a new type of green acid-base indicator. In this study, mainly the purple cabbage stability and acid-base indicates that the color change has done a preliminary study.
